Lemon Cashew Cream Tarts

     You guys know I’m always on the lookout for sweet treats that I don’t feel guilty about because they have wholesome ingredients. Welp, found another! I took a recipe that looked good and modified it and I love the results. This was my first time using dates to cook. I had to ask a worker at the grocery store where to find them and he told me by the raisins. After asking him where the raisins were located I was on the right track. So, if you go buy dates and this is your first time, they are by the raisins. I know that takes a lot of stress off of you, right?! That’s what I’m here for. 


     Blend cashews in a blender (I use my BlendTec) until fine then add other ingredients and blend until smooth. Transfer to a bowl and refrigerate for at least 1 hour. 





    For crust, blend almonds until fine then add other ingredients. I warmed my dates in the microwave for a few seconds to soften them before blending them. Press into muffin cups and freeze for an hour. I pressed them in muffin tins then transferred just the muffin cups to my freezer since I didn’t have room for the full pan and it worked well. 




     Take the crusts out of the freezer and fill with cashew cream and fruit on top. DO NOT overfill the crusts or they will overflow, like so:






     I think next time I make these I will leave them in the muffin cups for serving so I don’t have to worry about the crust breaking. They were delish! And by the way, can I just rave for a second about how much I use my Blendtec? I was a little hesitant to purchase it because of the price tag but my husband convinced me that we would use it a lot. And he has never been more right! Don’t tell him I said that. Seriously though, we use it multiple times a day. We each use it in the morning to make our protein shakes, and I use it to cook and bake ALL the time. I know this sounds like an ad for Blendtec, but I really am so glad that I bought it. I even use it to shred chicken!





This is the best price I have found for purchasing a Blendtec. Even though it’s refurbished, it comes with a 7-year warranty!

Ingredients





Cashew Cream


1 1/2 cup cashews 


1/4 cup water 


1/4 cup agave nectar 


1 heaping tsp coconut oil 


1 tsp vanilla extract 


1 Tbsp lemon juice 


1 Tbsp plus 1 tsp lime juice 





Almond Crust


1 cup almonds 


6 dates 


Splash vanilla extract 


2 tsp honey 





Instructions





1. Blend cashews in a blender (I use my BlendTec) until fine then add other ingredients and blend until smooth. Transfer to a bowl and refrigerate for at least 1 hour.

3. Pour cashew cream into cups and top with any fruit that sounds good! Blueberries were a great flavor combination. Enjoy!

I posted this the other day on my IG stories and s I posted this the other day on my IG stories and so many of you were like, “😅 Good to hear!!” So I’ll say it again for those of you who need it.

My twins are almost 5 (in July) and it is SO.MUCH.EASIER 😭 at this age 🤣🤣🤣 Tyler and I actually cannot even believe it. Traveling with them is actually 100% FUN and not 100% exhausting like it was before 😂

So...if you need to hear it...you’ve got this. You’ll make it through the insane toddler stage.

Every day is a gift AND it’s really hard and I’m here to tell you that it gets SO MUCH EASIER! 👏🏻

Happy Easter! I’ve been thinking a lot about WHY Happy Easter! I’ve been thinking a lot about WHY I want to learn so much more about my Savior as I get older and I’ve decided it’s because I need Him more.

Children don’t have the voice of the adversary in their ears all the time. We do.

My Savior and Redeemer Jesus Christ SAVES me from the chaos. He is the peace where it doesn’t make sense for peace to exist.

He knows me and cares for me with a perfect love. The only thing I can slightly compare it to is the love I have for my children. A love so big that forgiveness is possible over and over...and over again.

A love so big He was willing to give His life so we could be saved.

I’ll never be able to repay that debt but I’ll spend every day I have in gratitude and use His atonement that He made for me. For each of us. It will not have been in vain for me.
