Blend cashews in a blender (I use my BlendTec) until fine then add other ingredients and blend until smooth. Transfer to a bowl and refrigerate for at least 1 hour.
For crust, blend almonds until fine then add other ingredients. I warmed my dates in the microwave for a few seconds to soften them before blending them. Press into muffin cups and freeze for an hour. I pressed them in muffin tins then transferred just the muffin cups to my freezer since I didn’t have room for the full pan and it worked well.
Take the crusts out of the freezer and fill with cashew cream and fruit on top. DO NOT overfill the crusts or they will overflow, like so:
I think next time I make these I will leave them in the muffin cups for serving so I don’t have to worry about the crust breaking. They were delish! And by the way, can I just rave for a second about how much I use my Blendtec? I was a little hesitant to purchase it because of the price tag but my husband convinced me that we would use it a lot. And he has never been more right! Don’t tell him I said that. Seriously though, we use it multiple times a day. We each use it in the morning to make our protein shakes, and I use it to cook and bake ALL the time. I know this sounds like an ad for Blendtec, but I really am so glad that I bought it. I even use it to shred chicken!
This is the best price I have found for purchasing a Blendtec. Even though it’s refurbished, it comes with a 7-year warranty!
Lemon Cashew Cream Tarts

Ingredients
Cashew Cream
1 1/2 cup cashews
1/4 cup water
1/4 cup agave nectar
1 heaping tsp coconut oil
1 tsp vanilla extract
1 Tbsp lemon juice
1 Tbsp plus 1 tsp lime juice
Almond Crust
1 cup almonds
6 dates
Splash vanilla extract
2 tsp honey

3. Pour cashew cream into cups and top with any fruit that sounds good! Blueberries were a great flavor combination. Enjoy!
