This taco salad recipe is our whole family’s favorite recipe! It’s SO simple and delicious!
I am in love with this taco salad recipe. Our whole family loves it, including our kids, because it can be customized easily depending on the preference of each person. If you don’t like tomatoes, don’t add tomatoes on top! It’s also really quick to throw together, and I often have many of the ingredients on hand. This is in a rotation at our house which makes it very easy to decide what we are having for dinner. I don’t know about you, but life is very busy and I like to have meals that taste delicious and are healthy in my back pocket so I make them quickly instead of resorting to going out to eat on a whim. I hope you love it!

ingredients
▢ 2 lbs cooked ground beef (the amount will depend on how many people you are feeding. I always like to have leftovers!
▢ refried beans
▢ chopped lettuce
▢ chopped tomatoes
▢ cubed avocado
▢ corn chips (any brand will do – I prefer the organic corn chip dippers from Trader Joe’s)

▢ 1/2 cup brown sugar
▢ 1/2 cup oil of choice (I prefer avocado oil because it’s so much better for you)
▢ 1/2 cup white vinegar
▢ 1/2 cup ketchup
directions
- Cook ground beef (make sure to use this tool – it makes breaking up the meat and cooking it so much easier!)
- Cook refried beans on the stove. I like to buy organic refried beans from Costco and mix milk and cheese into the saucepan when I’m making them!
- Chop lettuce, tomatoes and avocado.
- Blend dressing ingredients in a blender.
- Start with ground beef, then layer beans, and all of the toppings! Finish with dressing.
