Rice made with coconut milk is my favorite way to eat it! Your family will love the added flavor and texture!
I don’t claim to be a chef that makes intricate and super fancy meals but what I do love is a simple meal that tastes incredible. Rice made with coconut milk adds the best flavor and texture to a simple dish, and it can be paired with many meals. It’s quick to throw together and my whole family loves when I make it like this.

INGREDIENTS
- 1 cup rice
- 2 cups coconut milk
- Water as needed
DIRECTIONS
- In your rice maker, add the rice and coconut milk, then stir to mix.
- If it’s extra thick, add in additional water. This will depend on the consistently of the coconut milk you use. I use the SO Delicious brand of organic coconut milk that I buy at Costco, and it’s pretty thick so I usually end up adding about 1/2 cup of water.
- Cook rice as you normally would and serve with meal of your choice!
