When I was growing up, I would make “Better than Boys” cookies which I named myself. We have all heard of “Better than Sex” cake, which I of course thought was extremely scandalous when I was young. The name I gave my cookies is much more PG.
I think these cookies are going to be a bigger hit with children mainly because most kids love the taste of Funfetti. They are really quick and easy to make so they could be great to make for children’s parties or an after school snack. They are very sweet but have a lot less sugar and fat than a lot of other cookies. There are other variations that would be fun to try with theses cookies as well. How cute would they be with Cadbury eggs on top for Easter? You can add other toppings or mix-ins to customize them. I think next time I will even add some coconut or almond extract.
I wanted to make a healthier version of my loved Better than Boys cookies. The original recipe calls for 1/3 cup vegetable oil which I replaced with applesauce. Cake mixes also used to have 18.9 ounces in them and now they have just over 15 ounces so I added coconut flour so they wouldn’t be runny. I get my coconut flour at Costco, but if you don’t have it on hand you can add normal white flour instead.
Coconut Funfetti Cookies
A sugar cookie that gets great flavor with the addition of coconut

Ingredients
1 Funfetti cake mix
2 eggs
1/3 cup applesauce
2/3 cup coconut flour
Sweetened coconut
Directions
1. Mix cake mix, eggs, flour and applesauce with a spoon in a bowl.
2. Using a spoon, scoop batter evenly onto two greased cookie sheets. I made 21 cookies.
3. Spray flat bottom of a cup lightly with cooking spray and smash cookies until they are a half inch thick, then top with desired amount of sweetened coconut flakes.
4. Bake at 375 for about 8 minutes, or until edges become very lightly browned. The cookies will be very soft but will harden a bit after they cool. Do not overcook them or the texture won’t be very moist.
5. Cool on cooling racks then store in airtight container.
